About the role


The Beverage Manager is responsible for overseeing the entire beverage department across The Mall Group's venues. This role includes managing the bar managers, optimizing the beverage program, maintaining high standards of quality and service, handling supplier relationships, negotiating deals, and ensuring operational efficiency in the beverage section.


Job description

  • Develop and implement a high-quality beverage program that aligns with the brand identity of each venue.
  • Regularly review and update beverage menus, ensuring a balanced offering that caters to customer preferences and seasonal trends. Introduce innovative drinks and trends, ensuring the beverage program remains fresh and competitive within the industry.
  • Lead, train, and develop bar managers across all venues, ensuring that staff are equipped with the knowledge and skills to deliver exceptional service. Conduct regular staff training on product knowledge, mixing techniques, and customer service standards.
  • Monitor performance and ensure consistency in the delivery of the beverage experience across venues.
  • Foster a positive, collaborative work environment within the beverage team to ensure high morale and engagement.
  • Build and maintain strong relationships with suppliers, ensuring high-quality products at competitive prices.
  • Lead the negotiation of supplier deals and contracts to ensure the best value for the company while maintaining quality standards.
  • Regularly review supplier performance and renegotiate terms as needed to secure favorable agreements.
  • Ensure the timely ordering of stock and the efficient management of inventory across all venues.
  • Oversee the management of beverage costs and ensure they align with budget expectations and profitability goals.
  • Regularly review inventory, wastage, and theft reports, working with venue teams to minimize losses.
  • Monitor the financial performance of the beverage program, adjusting strategies to increase revenue and reduce costs.
  • Implement pricing strategies for beverages in line with industry standards, ensuring profitability while remaining competitive.
  • Ensure the highest quality of beverages is served across all venues, maintaining consistency in taste, presentation, and portion size.
  • Address customer feedback regarding beverages, ensuring prompt resolution of any issues and maintaining high levels of guest satisfaction.
  • Work closely with the GM and AGM to resolve any operational or quality-related concerns.
  • Collaborate with bar managers to ensure that beverage service runs smoothly, from preparation to delivery.
  • Ensure that bars are properly stocked, equipment is maintained, and that health and safety standards are consistently met.
  • Oversee the daily operations of the beverage department, ensuring all tasks are completed in a timely and efficient manner.
  • Work with the Entertainment and Event Managers to provide support for beverage service during special events, ensuring high-quality drinks and service.
  • Assist in planning and coordinating bar services for large-scale events, ensuring efficient staff allocation, timely delivery, and consistency.
  • Ensure that all beverage service complies with local health, safety, and licensing regulations.
  • Monitor cleanliness, health, and safety standards in the bar area, ensuring staff adhere to operational procedures.
  • Ensure all staff are trained on alcohol service laws and company policies regarding safe and responsible service.
  • Track and analyze sales data to understand trends, customer preferences, and identify opportunities for improvement.


Qualifications

  • Able to communicate in English with Customer
  • Minimum of 5 years of experience in the beverage or bar management industry, with at least 2 years in a senior management position.
  • Proven track record in supplier negotiations, beverage program development, and managing large beverage teams.
  • Strong financial acumen with the ability to manage costs, analyze sales data, and maximize profitability.
  • Strong understanding of health, safety, and alcohol service laws and regulations.
  • Experience with bar inventory management systems, POS systems, and other beverage-related technologies.
